Yeast autolyzing system

The function of the yeast autolyzer is a reliable inactivation of the yeast cells in the harvested yeast by heat. The old yeast can then be sold as animal feed, for example, and thus offers an additional source of income.

The procedure is used in the brewing industry. In the brewing process, 3 to 4 times as much yeast is produced during fermentation as is required for pitching. Accordingly, there is a surplus of harvested yeast which must be disposed of.

The system is characterized by exact compliance of the heating temperature combined with reliable autolysis of the yeast cells.
Together with our partner company M&L Consulting, we also offer suitable solutions for beer recovery from the harvest yeast, such as cross-flow filtration.

Technical Description

The harvested yeast is first heated regeneratively and then with steam to the required pasteurization temperature. To achieve the desired autolysis, the heated yeast then flows through the heat-holding section, where it is kept at the required temperature for a defined period of time. After passing through the heat holding section, the old yeast is regeneratively cooled.
Since the harvested yeast is gently heated via a secondary hot water circuit, caking in the plate heat exchanger is avoided and high-quality ingredients in the product are preserved.
The unit can be controlled by a local PLC with a touch panel or by a process control system.
Designed for high hygienic standards, all common cleaning agents in the brewing and beverage industry can be used for CIP cleaning. The upstream valve combination allows the heat exchanger to be cleaned backwards.
